Recipe of the Month: Baked Lamb with Greek Salad

This week, we’re featuring a tried, tested, and loved recipe: Baked Lamb with Greek Salad, presented beautifully on the stunning new Maxwell & Williams Eucalyptus Bloom platter range. This recipe is perfect for a family meal or a special gathering, highlighting fresh, simple flavours.


Ingredients

For the Baked Lamb

·       Lamb leg or shoulder (approximately 2.5 kg)

·       Fresh rosemary, finely chopped (1-2 sprigs)

·       2 tbsp olive oil

·       Freshly cracked black pepper, to taste

For the Greek Salad

·       2 cups cherry tomatoes, halved

·       1 cucumber, diced

·       1 small red onion, thinly sliced

·       1 cup Kalamata olives

·       200g feta cheese, crumbled

·       1 green capsicum, sliced

·       2 tbsp fresh parsley, finely chopped (optional)

For the Salad Dressing

·       4 tbsp olive oil

·       2 tbsp red wine vinegar

·       1 tsp dried oregano

·       1 clove garlic, minced

·       Salt and freshly ground black pepper, to taste


Method

1. Prepare the Baked Lamb

1.     Preheat your oven to 180°C (350°F).

2.     Rub the lamb generously with olive oil, freshly chopped rosemary, and black pepper.

3.     Place the lamb in a roasting pan and bake for approximately 1.5 hours (or roughly 30 minutes per half kilogram). Baste occasionally with pan juices for extra flavour.

4.     Remove from the oven and let it rest for 10 minutes before carving.

2. Make the Greek Salad

1.     Combine cherry tomatoes, cucumber, red onion, capsicum and Kalamata olives in a large bowl.

2.     Gently toss with crumbled feta cheese.

3. Whisk the Salad Dressing

1.     In a small bowl or jar, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.

2.     Drizzle the dressing over the salad and toss gently to coat.

4. Serve

1.     Arrange the carved lamb on the Maxwell & Williams Eucalyptus Bloom platter.

2.     Serve the Greek salad in a matching bowl from the range for a cohesive presentation.
